Step-by-Step Instructions
- Shred the carrots using a box grater. Place the shredded carrots in a clean kitchen towel and squeeze very well to remove as much water as possible. This is the key to crispy fritters.
- In a medium bowl, combine the shredded carrots, breadcrumbs, Parmesan, egg, garlic powder, paprika, salt, and black pepper. Mix until the mixture holds together and feels slightly sticky.
- If the mixture feels too wet, add more breadcrumbs 1 tablespoon at a time. If it feels too dry, add a tiny splash of water or an extra egg yolk.
- Shape the mixture into small flat patties. Flat patties cook more evenly and become crispy faster than balls.
- Heat the oil in a non-stick skillet over medium heat. Fry the patties for 3–4 minutes per side, or until deep golden brown and crispy. Transfer to paper towels to drain.
