  • 0.25 cup breadcrumbs (plus more if needed)
  • 2 tbsp grated Parmesan cheese
  • 1 piece egg
  • 0.5 tsp garlic powder
  • 0.5 tsp paprika
  • 1 to taste salt and black pepper
  • 2 tbsp oil (for shallow frying)
  • 2 tbsp tahini
  • 2 tsp hot sauce (adjust to taste)
  • 2 tbsp water (plus more if needed)
  • 1 pinch pinch of salt

Step-by-Step Instructions

  1. Shred the carrots using a box grater. Place the shredded carrots in a clean kitchen towel and squeeze very well to remove as much water as possible. This is the key to crispy fritters.
  2. In a medium bowl, combine the shredded carrots, breadcrumbs, Parmesan, egg, garlic powder, paprika, salt, and black pepper. Mix until the mixture holds together and feels slightly sticky.
  3. If the mixture feels too wet, add more breadcrumbs 1 tablespoon at a time. If it feels too dry, add a tiny splash of water or an extra egg yolk.
  4. Shape the mixture into small flat patties. Flat patties cook more evenly and become crispy faster than balls.
  5. Heat the oil in a non-stick skillet over medium heat. Fry the patties for 3–4 minutes per side, or until deep golden brown and crispy. Transfer to paper towels to drain.
  6. In a small bowl, whisk together the tahini, hot sauce, water, and a pinch of salt until smooth and pourable. Add more water a little at a time if the sauce is too thick.
  7. Serve the hot carrot fritters with the spicy tahini drizzled on top or on the side as a dip.
